can anyone advise me on the best way to patch voids in a concrete celling without having the patch just drop right out

Exactly what do you mean patch voids? Do you mean cracks, or voids left from an exposed pour, or something else?

If its a big patch, make sure you use a product for vertical use, mix it stiff, use a wire or screen (like for stucco) and use tapcons or shoot nails with washers to hold in the screen.
For a thin coat or cracks, use the vertical patch product and caulking.
