I have finished the few (3 or 4) quilt racks that I have built with poly and never heard of a problem. That does not mean one does not exist, but for the life of me, I cant see it being one.

Let me know what you may or may not discover on this.

If you ensure the poly is fully dried, there should be no problem. With the colder weather, this may extend the drying time up to a week (or more if you use a poly/linseed oil mix) if you do your finishing in a cool garage or shop. During the summer I would still give it three days. If you use the poly-shades (stain and poly combined) I would use just clear for the last coat or two to ensure no stain leaches out.
If drying time is going to be a problem, I would use rattle-can lacquer.

Just make sure its dry---once polyurethane cures it is the same as plastic---just make sure you give it enough time to cure properly--as mentioned the colder weather slows down the curing time. :)
