1. why we need that extension?
2. Can I use other valves to replace those "old" valves?

1. Either those were meant as future lines, or the plumber simply didn't have any 90's left that day, more than likely they were meant to be used in the future.
2. Yes, there are better valves to replace those older stop and waste valves. Google ball valves. Ball valves are full flow, and theres nothing inside them to go bad in the future.

didnt those extensions have somethig to do with keeping the pipes from knocking, or for something to do with trapped air.......
isnt that and old pumbers trick........?

Air hammer chambers would face up not down. Unless they were meant to be sediment traps Aaron is on the right track.
