Do i need to seal the top or just wax then what wax and what sealer.

I wouldn't think you'd *need* to do either; cast iron tops should be waxed to prevent rusting, but granite (of course) doesn't have this issue.

I'd think you'd likely want to wax it anyway, though, to make it nice and smooth to pass the wood over.

Use a wax without silicone in it; most people here recommend johnson's paste wax.
