The difference between alloy and high speed dies is the material they are made of. High speed dies are made of high speed tool steel, while alloy dies are made of alloy steel. I recommend high speed dies in situations where a lot of continuous threading is being done, or tougher materials are being threaded. In most other cases alloy dies will suffice.
