Anything by Jeff Jewitt---but the best beginning one was something like Understanding Wood Finishes or the like---it is a great overview, but with a great presentation---I'm in the middle of it and realy learning a lot.
I like "Great Wood Finishes" by Jewitt, followed closely by Mike Dresdner's "The New Wood Finishing Book". The Flexner book Dave referred to is interesting if you're interested in the chemistry and assembly of wood finishing products.
