I tell ya, if you like both tastes, here's a nice little variance on a standard steak for you - once you're done grilling the first side of the steak, and you're cooking the other side, put some sliced/crumbed chunks of blue cheese on top of it. Oooey, gooey, tart-and-tangy goodness. If you like blue cheese, the flavours just go together wildly with a nice steak.
